Simple Sag Aloo

Shared a recipe for this on Bluesky today and made a bit of a mess of it so below is a more carefully written out one. If you like this sort of thing, I’ve written up a short “booklet” of my favourite recipes, which you can download here:
Ingredients:
6 – 8 new potatoes / 2 large potatoes, cut into roughly 2 cm cubes
Same volume of frozen spinach – leaves or chopped
1 medium / large onion, diced
1 teaspoon cumin seeds
½ teaspoon ground turmeric
1 teaspoon ground coriander
4-5 cloves minced garlic
2 inches grated fresh ginger
2 tablespoons of vegetable oil
Salt to taste
Method:
- Heat vegetable oil in pot and add cumin seeds and let them sizzle for about a minute, making sure they turn brown, but don’t burn.
- Add garlic and fry on medium heat til golden brown
- Add onion and fry til soft and translucent
- Add ginger and continue cooking til onion light brown
- Add potatoes and stir well, leave for a couple of minutes.
- Add turmeric and ground coriander and stir well, leave for a minute.
- Add salt and stir well.
- Add a splash of water, just enough to cover base of pan, and cook on low / medium heat til potatoes done
- Stir in frozen spinach and cook til it is all defrosted and warmed through.
